Ingredients:
1 clove(s) garlic finely minced |
1 medium onion chopped |
2 tablespoon(s) butter or margarine |
2 small potatoes (optional) chopped |
3 carrots chopped |
2 cup(s) celery chopped |
2 pound(s) canned tomatoes cut-up |
2 teaspoon(s) salt |
1/4 teaspoon(s) pepper |
1 bay leaf |
1 quart(s) boiling water |
1/4 cup(s) parsley chopped |
1/4 pound(s) macaroni shells |
sharp cheese grated |
Directions:
1. Cook garlic, onion in butter 5 minutes in a deep kettle. Add potatoes, carrots, celery, tomatoes. Season with salt & pepper. Cook covered for 20 minutes. Now add boiling water, chopped parsley and macaroni shells. Cook uncovered 12 minutes until macaroni is tender. Can substitute rice, if desired. Serve with a sprinkling of grated sharp cheese on each serving. 2. Preparation time is about 30 minutes. Cooking time is 35 - 40 minutes. |
