My mother used to use these in one of her lessons, when she was a Home Economics teacher in the '60s. Ingredients:
1 cup softened butter |
1/2 cup packed brown sugar |
2 eggs, seperated |
2 cups flour |
1 cup chopped pecans |
1 teaspoon vanilla extract (optional) |
currant jelly or raspberry jelly |
Directions:
1. Preheat oven to 350'. 2. Cream butter and sugar in a large bowl. 3. Add yolk and mix. 4. Add flour, beat until well blended. 5. In a small bowl, lightly beat egg white. 6. Form dough into small balls. 7. Dip each ball in egg white and roll in nuts, place on a cookie sheet. 8. Bake 5 minutes. 9. Make depression in each cookie, the back of a small measuring spoon works well. 10. Bake 10 more minutes. 11. Cool, add small spoonful of jelly in the depression of each cookie. 12. Substitutions: may use walnuts or almonds, instead of pecans. 13. May use icing instead of jelly. |
