Moms Sweet Potato Casserole |

My grandmother, affectionally called Mom, made this on holidays and everyone really liked it alot. Almost tastes like a pecan, sweet potato pie. Ingredients:
1 large can sweet potatoes |
3/4 stick margarine |
2 eggs |
dash vanilla |
1 c evaporated milk |
1 1/2 c sugar |
topping |
1/2 c chopped pecans |
1/2 c light brown sugar |
1 c crushed corn flakes |
3/4 stick margarine, melted |
Directions:
1. Preheat oven to 400 degrees. 2. Warm sweet potatoes, drain juice and mash. 3. Cream margarine, eggs and sugar together. 4. Add milk and vanilla. 5. Add mashed sweet potatoes and mix well. 6. Pour in casserole dish and bake for 15 - 20 minutes. 7. Topping: 8. Melt margarine and combine with other topping ingredients. 9. Sprinkle over baked sweet potatoe mixture. 10. Bake for an additional 15 minutes. |
