Mom's Sweet Potato Casserole |

This casserole is a staple at all of our family gatherings. Even people who typically do not care for coconut ask for the recipe. To prep the sweet potatoes, I bake them for approximately 1 hour at 400°F. Ingredients:
3 cups sweet potatoes, cooked and mashed |
1 cup granulated sugar |
1 (3 1/2 ounce) can coconut |
4 tablespoons butter |
2 eggs |
1 teaspoon vanilla extract |
1 cup brown sugar |
1 cup pecans, chopped |
4 tablespoons butter, melted |
1/2 cup all-purpose flour |
Directions:
1. Mix first 6 ingredients (sweet potatoes through vanilla) well and pour into a greased 10x10 casserole. 2. Mix remaining ingredients together and spread over the top of sweet potato mixture. 3. Bake at 350°F for 50 minutes. |
