A delicious stuffing - quantities here good for stuffing 2 chickens, with some overflow.
Ingredients:
1 lb ground beef
2 onions, chopped
2 cups sliced mushrooms (add more if you love mushrooms like i do)
6 cloves garlic, chopped
3 stalks celery, sliced
6 matzas
2 eggs, beaten
salt to taste
pepper to taste
Directions:
1. Wet matzas under running tap and crumble into large bowl. Add eggs and set aside.
2. Brown beef and add to matzot when browned.
3. Saute, onions, garlic, celery and mushrooms and add to bowl when softened.
4. Mix everything together and stuff into 2 whole chickens. Place any leftover stuffing in roasting pan under chickens.
5. Rub a little oil and paprika into chicken skins.
6. Place in oven at medium-high temperature and rost for approximately 80 minutes till done.
