This is my Mom's spinach salad recipe that we grew up with and it's always been a favorite of anyone that's tried it. I believe Mom cut the recipe from the newspaper. Prep time is approximate (I like to tear the stems off the spinach so that takes a few more minutes, your choice), and the cooking time is for the hard boiled eggs. This is very good the next day (spinach kind of wilts in the dressing). I hope you like it as much as we do! Ingredients:
2 (10 ounce) bags fresh spinach, rinsed, patted dry & torn |
1/2 cup celery, chopped |
6 tablespoons onions, chopped |
3/4 cup muenster cheese (my favorite) or 3/4 cup mozzarella cheese, cut in 1/4 inch pieces (i've used shredded italian blend when i haven't had anything else on hand and it's just as good) |
4 hard-boiled eggs (3 eggs chopped, 1 egg grated for garnish) |
1/2 teaspoon salt |
1/4 teaspoon black pepper (to taste) |
1/2 teaspoon tabasco sauce |
1 1/2 teaspoons vinegar |
1 tablespoon horseradish |
1 cup mayonnaise |
paprika |
Directions:
1. Combine celery, onion, 3 chopped eggs, cheese & spinach. 2. Combine salt, pepper, Tabasco, vinegar, horseradish & mayonnaise. 3. Mix dressing with vegetables. 4. Put in serving dish, garnish with reserved grated hard boiled egg & sprinkle with paprika. 5. Chill. |
