My mother made this when I was growing up, not sure where she got the recipe or if she even had one. = ) Ingredients:
1 can stewed tomato - drained & diced |
1 1/2 cup chicken broth |
1 1/2 cup uncooked white rice |
1 t butter |
2 t chili powder |
3/4 t mexican oregano |
1/2 t garlic salt |
2 green onions diced |
3 t finely chopped cilantro |
Directions:
1. In med saucepan, bring all ingredients to a boil, reduce heat, cover and simmer for 25 min. Fluff rice, place in serving bowl, garnish with sliced green onions and cilantro. |
