These are really, really good and go really, really quick. They are a great party dish because they can be made ahead of time and frozen in the sauce & are kept warm in a crockpot. This recipe makes approximately 100 appetizer size meatballs. Ingredients:
meatballs |
2lb. ground beef |
2c. ritz crackers; finely crushed |
1 egg; beaten |
1t. salt |
couple of dashes of pepper |
1/2c. dried minced onion |
sauce |
1-1/2c. ketchup |
1/2c. water |
1-1/2c. brown sugar |
1 clove garlic; minced |
1/4t. salt |
1onion; finely chopped |
1 lemon; sliced |
Directions:
1. Mix all meatball ingredients until well mixed. 2. Roll meat mixture into approximately 100 meatballs. 3. Bake 325F for 20 min. 4. Meanwhile: mix all sauce ingredients together & heat through. 5. Stir in the lemon slices after removing sauce from stovetop. 6. Remove meatballs from oven and transfer into a large crockpot. 7. Pour sauce (with lemon slices) over meatballs and toss gently to coat. 8. Keep meatballs warm in crockpot set on low. 9. NOTE: 10. These can be made ahead of time and frozen in the sauce. Remove the lemon slices prior to freezing. |
