This is a favorite among my family. My mom has been making these since I was a little kid, and I have only grown to like them more! Even if you don't like pumpkin, you're sure to like these! They are a tasty treat! :-) Ingredients:
4 eggs |
1 cup salad oil (i use canola oil) |
2 cups sugar |
15 ounces pumpkin |
2 cups flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1/2 teaspoon ginger |
1/2 teaspoon clove |
1/2 teaspoon nutmeg |
6 ounces cream cheese |
1/4 cup margarine |
1 tablespoon milk |
1 teaspoon vanilla |
4 cups powdered sugar |
Directions:
1. Mix the first four ingredients in a bowl (eggs through pumpkin). 2. Mix the remaining ingredients in a bowl (flour through nutmeg). Combine flour mixture with wet mixture. Beat together until combined. 3. Pour into two 9 x 13 inch pans. Bake at 350 for 25-30 minutes. 4. To prepare the cream cheese frosting, combine the listed ingredients (cream cheese through powdered sugar). Add more milk or powdered sugar to reach desired consistency. 5. Frost bars when cool.
