I grew up with this potato salad. This salad has a bite, which my family and I prefer over the sweet-style potato salads most everyone else I know makes. Ingredients:
1 lg. onion diced |
8-10 potatoes cooked until tender and chopped while hot |
8-10 hard boiled eggs chopped |
celery or celery seed |
**combine above ingredients |
dressing |
2+ c. real mayonnaise |
2-3 tbs. vinegar |
2-3 tbs. dry mustard |
2-3 tbs. yellow mustard |
season salt (liberal) |
3+ tbs. horseradish |
salt |
pepper |
Directions:
1. Mix at least 1 hour before adding to the above, taste changes as it sets. Combine dressing with potato mixture and fold together right after you cut the potatoes so they are still hot, (the potatoes absorb the flabor better). If possible make the day before and check flabor, add salt if necessary. |
