This is a recipe that i grew up on and have always loved. It's been passed down through the family for at least 3 generations. I get so many remarks about how....this tastes just like the potato salad my grandma used to make! Read more !! remember though for it to be just right it's important to use Miricle Whip and not plain mayo. It just doesn't have that tang that makes it extra special Ingredients:
4 large potatoes |
2 hard boiled eggs, cooled and diced |
1/2 small onion diced |
2 ribs celery, diced |
salt and pepper to taste |
dressing |
3/4 cup miracle whip |
1 1/2 tablespoons mustard |
1/2 cup dill pickles, diced |
Directions:
1. Cube and boils potatoes until fork tender. 2. Drain and cool for 15 mins. 3. Add onions, celery, salt and pepper. 4. Mix miracle whip, mustard and pickles in separate bowl and add to veggies. 5. Serve chilled. |
