This is my Mom's potato salad. She is a old style cook (a little of this, some of that) so all measurements are approximate. The longer it sits the better it tastes so make it a day in advance. Ingredients:
5 lbs potatoes |
6 hard-boiled eggs |
2 yellow onions |
3/4 cup mayonnaise |
1/4 cup mustard |
1 cup pickle relish |
salt and pepper |
Directions:
1. Cut potatoes into bite sized chunks and boil until soft. 2. Chop onion and eggs. 3. Mix it all up and refrigerate. |
