Mom's Potato Salad

This is my Mom's potato salad. She is a old style cook (a little of this, some of that) so all measurements are approximate. The longer it sits the better it tastes so make it a day in advance.
Ingredients:
5 lbs potatoes
6 hard-boiled eggs
2 yellow onions
3/4 cup mayonnaise
1/4 cup mustard
1 cup pickle relish
salt and pepper
Directions:
1. Cut potatoes into bite sized chunks and boil until soft.
2. Chop onion and eggs.
3. Mix it all up and refrigerate.
