My mom would make this when we were children. It is simple, inexpensive, & it feeds a lot. Onions can be added to this stew. As picky children we didn't like them so Mom left them out. Ingredients:
1 head cabbage |
1 (14 ounce) turkey kielbasa |
4 -5 potatoes, peeled & cut into chunks |
2 tablespoons butter |
1/2-1 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon onion powder |
1/4-1/2 teaspoon garlic powder |
2 cups low sodium chicken broth |
water, to cover |
2 -3 ounces velveeta cheese (optional) |
Directions:
1. Cut the core out of the cabbage. Rinse & cut into quarters then cut the quarters in half. Peel the potatoes & cut into large chunks. 2. Cut the sausage into 1/2 inch pieces. Then brown in a frying pan for 5 minutes. 3. Add all the ingredients into a large pot except the cheese. Add enough water to the pot to cover the cabbage. 4. Cover & cook over medium-low heat for 20-25 minutes. The soup is done once the potatoes are tender. 5. Optional: Halfway through cooking cut the cheese into chunks & add to the soup. Stir until melted. |
