Moms Peanut Brittle

this recipe comes from my late Mother-in-law..and She made great candy.. I made it once and it turned out very good. I hope you like it as much as the family did.
Ingredients:
1 1/2 cups sugar
1 cup liquid light corn syrup
1/3 cup of water
1 tbsp. butter
1 1/2 cups salted spanish peanuts
1 teasp. baking soda
1/2 teasp. vanilla
Directions:
1. in a heavy 3 quart saucepan: put the sugar, corn syrup, and water
2. stir over low heat until the sugar disolves
3. continue to stir until the syrup boils
4. put in your candy therometer
5. turn the heat to high until the temperature reaches 280'F
6. lower heat and add the butter, stirrring rapidly
7. then add the peanuts.
8. cook for 2-3 mins stirring occasionally until the temperature reaches 300'F
9. remove from heat, add baking soda. stir until it bubbles up.
10. add vanilla and stir again
11. pour into 2 well greased cookie sheets
12. spread thinly with a spatula
13. when the edges are cool enoughto handle, pick them up and stretch as thinly as possible.
14. as the candy cools down pull it loose from the pans and turn over.
15. stretch again. you want this to be thin
16. this candy doesn't keep well.. It will get sticky unless kept in a tightly covered tin can..
17. ****a little note from Mom: be sure and grease the cookie sheets!
