Mom used to make this rice and I have no idea of the origin of the recipe. It is very similar to the Mushroom Rice Casserole except this has green peppers and no mushrooms. Ingredients:
1 teaspoon olive oil |
1/2 cup onion, chopped |
1/2 cup green bell pepper, chopped |
10 1/2 ounces cream of mushroom soup |
10 1/2 ounces beef consomme |
1 cup long-grain rice |
Directions:
1. Preheat oven to 350. 2. In a large skillet or pan, saute onion and green pepper in oil. 3. Add mushroom soup and heat. 4. Stir in rice and beef consomme. 5. Pour into a greased casserole dish. 6. Bake uncovered 1 hour stirring a couple of times. |
