Mom's Macaroni and Cheese |

This recipe is so easy your family will never want to eat the boxed kind again! I always double the recipe and freeze the extra. I have also added ham, hamburger, or sausage. I often serve it as an entre with a side of steamed broccoli and a fruit. Ingredients:
16 ounces small curd cottage cheese |
16 ounces sour cream |
2 large eggs |
1 1/2 teaspoons salt |
1 teaspoon pepper |
4 cups shredded sharp cheddar cheese, divided |
5 cups macaroni noodles |
Directions:
1. Boil noodles according to package directions and drain. Mix the rest of the ingredients in a large bowl until completeley mixed, incorporating 2 cups of the shredded cheese. Stir in drained noodles into the cheese mixture. Divide and transfer mixture into two 13x9 inch casserole dishes, lightly sprayed with non stick cooking spray. This is a double batch, so freeze the second tray. Cook at 350 degrees for 45 minutes. During the last 15 minutes of cooking, sprinkle the remaining cheese on top and continue cooking. Let stand for 15 minutes until serving. |
