Another favorite recipe from my Mother. Passed down from the German side of the family. Not health food but it sure tastes good. *Caution* contains raw egg. Ingredients:
12 med red potatoes, cooked, cut in 1 size pieces |
1 lb bacon |
2 onions |
2 eggs beaten |
1 tsp. salt |
1/2 tsp. pepper |
2 tsp. sugar |
1 cup vinegar |
Directions:
1. Fry bacon until very crispy. Drain bacon on paper towels then crumble. Reserve 1/2 cup of bacon drippings. 2. Combine potatoes, bacon, onion in a bowl. 3. Combine bacon drippings, eggs, salt, pepper, sugar, vinegar and blend well. I use a deep narrow bowl and an immersion blender. Pour dressing over potatoes and refrigerate overnight. Tossing/stirring occasionally. |
