Takes some time to fix but the flavors are delicious. I no idea where Mom got this recipe but I love it. Ingredients:
1 lb. dry lentil beans |
1/2 lb. bacon, diced |
2 medium onions diced |
2 nice carrots diced |
2 quarts water |
1 cup celery diced |
salt to taste. i only use kosher. |
fresh cracked black pepper to taste |
1 bay leaf |
1 large potato pared |
1 hame bone or a real nice ham hock |
2 tbsp. lemon juice |
Directions:
1. Wash and drain lentils 2. In large pot fry bacon until crispy 3. Add onions and carrots. 4. Cook until onions are tender. 5. Add lentils, water, celery, salt, pepper and bay leaf. 6. Grate potato into mixture. 7. Add ham bone or ham hock. 8. Simmer 3 hours then remove bay leaf and bone or hock. 9. Cut meat off bone or hock then return to soup and add lemon juice. 10. Serve with nice crusty and buttered bread. |
