My Mom made this when I was a kid and hated tomatoes! Funny how our tastes change as we grow. Not sure of the yield so I am guessing until I make it and see. If you make it, let me know! Ingredients:
4 tomatoes, skinned |
2 green peppers |
2 medium onions |
1 garlic clove |
3/4 cup tomato juice |
2 cucumbers |
1/4 cup vinegar |
1/4 cup olive oil |
salt, to taste |
pepper, to taste |
crouton, to garnish |
Directions:
1. Puree 1 onion, 1 green pepper, 1 cucumber, 1 clove garlic and 4 tomatoes in a blender. 2. In a very big bowl, mix together oil, vinegar, tomato juice, salt and pepper. Add the mixture in the blender to this and blend well. 3. Chop remaining onion, cucumber, and green pepper. Serve this on top of each bowl of soup and garnish with croutons. 4. Serve ice cold. |
