Bacon adds a savory smokiness to this classic fried rice. Frozen peas add a splash of color. You can add some cooked chicken or pork. Ingredients:
1 tsp canola oil |
1 egg,beaten |
8 strips bacon,chopped |
1 c chopped fresh mushrooms |
8 green onions,thinly sliced |
3 c leftover rice |
1 c bean sprouts |
1 c frozen peas,thawed |
1/4 c reduced-sodium soy sauce |
Directions:
1. In large skillet,heat oil over med-high heat. Pour egg in pan.As egg sets,lift edges'letting uncooked portion flow underneath. When egg is completely cooked,remove to plate;set aside. 2. In same skillet,cook bacon over med. heat until crisp. Using a slotted spoon,remove to paper towels;drain,reserving 2 Tbs. drippings. Saute mushrooms and onions in drippings. 3. Stir in the rice,bean sprouts,peas,soy sauce and bacon.. Chop egg into small pieces;stir into pan and heat through. |
