Love this cake! Something I always request at Thanksgiving. I prefer it with the caramel icing. This is an old fashioned icing recipe, doubles as mom's caramel fudge. I remember Dad helping her beat the icing every year. Read more . Her arm wold get sooo tired, and she would bring the pan to him, in the living room, with a hot pad, and he would place the hot pad on that old beige stool in front of him, putthe pan on it, and beat that icing while he sat in his chair watching tv!! OH YEAH - do not refrigerate the cake. Ingredients:

3/4 c butter |
2 c sugar |
2 eggs, well-beaten |
2 c flour |
1 t salt |
1 1/2 t baking soda |
2 t. cinnamon or allspice |
3 c diced apples |
1/2 c pecans |
caramel icing |
2 1/4 c firmly packed brown sugar |
1 small can evaporated milk (2/3 c) |
1 stick margarine |
10 large marshmallows |
cream cheese icing |
8 oz cream cheese |
1 box powdered sugar |
mik to moisten |
1/4 t vanilla |
mix together |
Directions:
1. CAKE: 2. Cream butter & sugar until light and fluffly 3. Add eggs 4. Beat well 5. Sift together: flour, salt, soda and cinamon 6. Add dry ingredients to creamed mixture. Beat well. 7. Stir in apples and nuts 8. Pour into greased 9x13 pan. Bake at 350 for 40 minutes 9. CARAMEL ICING: 10. Bring sugar, evaporated milk and margarine to boil 11. Cook 6 minutes over medium heat, stirring constantly 12. Remove from heat 13. Add marshmallows 14. Beat to spreading consistency 15. Spread fast on cake, or turn into buttered dish for fudge. 16. ** Mom made this in her old stainless copper bottomed saucepan (the large one), and beat with her wooden handled metal spoon. Her arm would get really tired, and Dad would have to take over, So it takes several minutes, don't give up!** |
