Simple and tasty, great for a picnic. Prepare early, so that the salad can chill several hours before serving (chilling not included in prep time). For a healthier version, use 1/2 the oil and substitute Truvia for sugar. Ingredients:
1 (15 ounce) can green beans |
1 (15 ounce) can yellow wax beans |
1 (15 ounce) can kidney beans |
1 (15 ounce) can garbanzo beans |
1 onion, chopped to 1/4-inch bits |
1/2 bell pepper, chopped to 1/4-inch bits |
1 (2 ounce) jar pimentos |
3/4 cup cider vinegar |
3/4 cup olive oil |
3/4 cup sugar |
Directions:
1. Drain and rinse beans; mix with onion, bell pepper and pimentos. 2. Combine cider vinegar, oil and sugar; pour over bean mixture. 3. Chill several hours before serving. |
