My mother just loves these buttermilk pancakes. Ingredients:
2 eggs, beaten |
2-1/2 cups buttermilk (organic valley) |
3 tbs. oil (safflower) |
1-3/4 cups flour |
1-1/2 tsp. baking soda |
1-1/8 tsp. cream of tartar |
1 tbs. sugar |
1 tsp. salt |
Directions:
1. Combine liquid ingredients and dry ingredients separately. Add liquid ingredients to dry and mix until smooth. Cook in heavy pan over low heat approximately two minutes on each side. |
