Just a simple soup that my mother made and I make for my family. I usually keep the ingredients in my freezer so it's a nice quick meal. I'm posting this so my children will have it . It's simple and healthy and very versatile. I prefer plenty of tomatoes. Ingredients:
1 (15 ounce) bag frozen mixed vegetables (potatoes, corn, tomato's, okra and green bean mix) |
1 lb stew meat (browned) or 1 lb ground meat (browned) |
3 cups water |
15 ounces whole canned tomatoes (chopped retaining juices) |
salt and pepper |
Directions:
1. Bring water, vegetables, and can of tomatoes with juices to a boil, add salt and pepper. Cook for approximately 15 minutes. 2. Add beef now (if using ground meat be sure to brown and drain before using) and cook another 15 minutes or until vegetables reach desired consistency. 3. I serve this with a pan of cheese jalapeno cornbread. Would be good with rice. |
