Mom's Crock Pot Potato Soup |

From Stack family cookbook Ingredients:
6 potatoes, cut into small chunks |
1 onion, chopped |
1 carrot, chopped |
2 stalks celery, chopped |
5 cup water |
4 chicken bouillon cubes |
2 tbsp parsley, finely chopped |
1/3 cup unsalted butter |
12 oz nonfat evaporated milk |
Directions:
1. Put all ingredients except for evaporated milk in a crock pot. Cover and cook on low 10-12 hours or on high 3-4 hours. Stir in evaporated milk 1/2 hour before serving. 2. Nice to add: 1 cup grated cheddar cheese and/or crisp crumbled bacon. 3. If you like thick soup, thicken with cornstarch and water mixture. |
