This is a low carb dish I found on a diabetes web site. The original recipe called for laying three strips of bacon over the dish and then discarding them before serving. I had no bacon but I did have drippings so I dotted the top with them. I also used garlic salt instead of regular salt to season the dish. Ingredients:
1 1/2 lbs extra lean ground beef |
1 1/2 lbs cabbage, chopped |
3 1/2 oz onion, chopped |
14 1/2 oz can diced tomatoes |
1 tsp. butter |
1 salt and pepper to taste |
Directions:
1. Brown beef and onion; drain grease and season with salt and pepper. 2. Put half the cabbage in a greased 9X13 baking dish; season with salt and pepper. 3. Top with meat and remaining cabbage; season again. 4. Spoon tomatoes and their juices evenly over cabbage. 5. Dot with butter (or better yet bacon drippings if you have them) 6. Cover with foil and bake at 325 for 3 hours. |
