My Mom created this recipe when I was a child, and I tweaked it a bit to my liking. It's the only coleslaw I will eat. Ingredients:
1-1/2 cups shredded cabbage |
2 tablespoons shredded carrot |
1 tablespoon chopped sweet red pepper |
1 tablespoon chopped green pepper |
2 tablespoons plus 1 teaspoon reduced-fat sour cream |
1-1/2 teaspoons reduced-fat mayonnaise |
1 teaspoon red wine vinegar |
1/2 teaspoon sugar |
1/4 teaspoon celery seed |
1/4 teaspoon salt |
Directions:
1. In a large bowl, combine the cabbage, carrots and peppers. In a small bowl, whisk the sour cream, mayonnaise, vinegar, sugar, celery seed and salt. Pour over cabbage mixture; toss to coat. Chill until serving. Yield: 2 servings. |
