Moms Chilled Melon Buttermilk Soup |

This delicious soup won my mom a blue ribbon (and $150) at the WI state fair, for a SACO buttermilk powder recipe! Ingredients:
1 1/2 cups orange juice |
1/3 cup saco buttermilk blend |
1 medium cantaloupe, peeled, seeded, and cubed |
2 t. honey |
1/4 t. salt |
1/4 t nutmeg |
1/2 t. vanilla extract |
1/8 t. cayenne pepper (optional) |
6 mint sprigs for garnish |
Directions:
1. Pour orange juice into blender. 2. Add buttermilk blend and blend untill powder is dissolved. 3. Add cantaloupe, cover and process until pureed. 4. Add the honey, salt, nutmeg, vanilla, and cayenne pepper. 5. Cover and process till smooth. 6. Chill for at least 1 hour before serving. 7. Pour into six bowls and garnish each with a mint sprig. |
