1/2 vidalia onion (or sweet onion), diced |
6 oz (1 small can) tomato paste |
14 1/2 oz (1 can) garbanzo beans, drained and rinsed |
14 1/2 oz (1 can) red kidney beans, drained and rinsed |
14 1/2 oz (1 can) diced tomatoes, no salt added |
1/2 cup cheddar cheese, shredded |
1/4 tsp chili powder (or to taste) |
Directions:
1. Cook onion until translucent, 2-3 minutes. 2. Brown ground beef. 3. Add tomato paste. Stir into beef until evenly distributed. Added diced tomatoes, kidney beans, and garbanzo beans. Add water if sauce is too thick. Add chili powder. Simmer 10-15 minutes until sauce thickens. 4. Add cheese about 2 minutes before chili is done. Stir in and let melt completely. Remove chili from heat and let cool 5 minutes. 5. Serve with brown rice. |
