One of my favorites. My mom has made this for my birthday for more than 25 years. Its very warm and hearty on a cold day. * hot chili powder can be used to make it spicier. * This yields a big pot, extra freezes nicely in a ziplock for another day. Crackers and/or buttered bread go great with this meal. Ingredients:
1 1/2-2 lbs ground beef or 1 1/2-2 lbs ground chuck |
1/2 medium green bell pepper |
1 medium onion |
2 tablespoons chili powder (more or less per what you like) |
3 (14 ounce) cans pinto beans |
3 (14 ounce) diced tomatoes |
Directions:
1. In a large stock pot combine meat, pepper, onion, and chili powder, salt, and pepper. Using med.- high heat cook until meat is brown and onion and pepper start to soften. 2. Once the meat, pepper, and onion is ready add the beans and tomatoes and mix. 3. Simmer for at least 20 minutes, I prefer for it to simmer for about 45 minutes. |
