This is the cake I asked for each year on my birthday. The cake is moist and the frosting fantastic!
Ingredients:
cake
2 cups sugar
2 cups flour
2 tsp baking powder
1 cup wesson oil
4 eggs
3 cups grated carrots
2 tsp cinnamon
frosting
8 oz cream cheese, room temp
1/4 lb butter, room temp
1 lb powdered sugar
2 tsp vanilla
1 cup chopped walnuts/pecans (optional)
Directions:
1. Cake
2. Sift and mix dry ingredients
3. add oil and stir well
4. add eggs one at a time, continue stirring between each
5. add carrots
6. batter will be very thick
7. Bake 35 minutes at 350
8. Frosting
9. Blend butter & cream cheese
10. add sugar & vanilla
11. blend until smooth & creamy
12. stir in nuts
