This is the cake I asked for each year on my birthday. The cake is moist and the frosting fantastic! Ingredients:

2 cups sugar |
2 cups flour |
2 tsp baking powder |
1 cup wesson oil |
4 eggs |
3 cups grated carrots |
2 tsp cinnamon |
frosting |
8 oz cream cheese, room temp |
1/4 lb butter, room temp |
1 lb powdered sugar |
2 tsp vanilla |
1 cup chopped walnuts/pecans (optional) |
Directions:
1. Cake 2. Sift and mix dry ingredients 3. add oil and stir well 4. add eggs one at a time, continue stirring between each 5. add carrots 6. batter will be very thick 7. Bake 35 minutes at 350 8. Frosting 9. Blend butter & cream cheese 10. add sugar & vanilla 11. blend until smooth & creamy 12. stir in nuts |
