This is a very old recipe from my Mom. I love how moist they are! The secret ingredient is baby food! Ingredients:
1 cup sugar |
3/4 teaspoon cinnamon |
1 teaspoon baking soda |
2 eggs |
1/2 teaspoon salt |
1 teaspoon vanilla |
1 cup all-purpose flour |
1 (7 1/2 ounce) junior baby carrots |
1/2 cup raw ground carrot |
1/4 cup raisins |
1/4 cup walnuts, chopped |
12 ounces cream cheese, softened |
1/4 cup butter |
2 cups powdered sugar |
2 teaspoons vanilla |
Directions:
1. Mix all ingredients in a large bowl and place batter in a greased and floured 13X9-inch pan;. 2. Bake at 350 degrees for 20 minutes or until an inserted knife or toothpick into the center comes out clean. 3. Cool completely. 4. Mix all frosting ingredients and frost. |
