These are my tried and true butter tarts...the same one my mom made for years. They are easy and delish! Ingredients:
1/2 c. golden raisins |
1/4 c. butter |
1/2 c. brown sugar |
1/2 c. corn syrup |
1 egg, beaten |
pinch salt |
1 tsp. vanilla |
12 tart shells, or 24 mini shells |
Directions:
1. Measure raisins into glass bowl. Pour boiling water over, and let plump for 10 minutes. Drain well, add butter and stir to melt. Add sugar, corn syrup, egg salt and vanilla. Whisk to combine well. Use about 2 tablespoons per tart shell to fill, trying to even out the raising. Bake in 400 degree oven for 12-15 minutes until golden. Let cool to set. 2. If you like a less runny filling, beat an additional egg, measure 1 tablespoon and add to mixture. Discard remaining. 3. I also make these with pecans instead of raisins, just eliminate the plumping process, and start with melting your butter. Put 2 pecan halves in the bottom of each shell, and proceed from there. Butter pecan extract added with the vanilla is nice in those, as well, but just a smidge. |
