Incredibly moist and self-icing. To make sugar-free, replace sugar cup for cup with Nature Sweet white crystals. Ingredients:
4 tablespoons cocoa powder (hershey unsweetened) |
5 1/3 tablespoons vegetable shortening (crisco) |
2 eggs |
1 cup sugar (or nature sweet) |
1/2 teaspoon vanilla |
1 cup flour |
1/4 teaspoon salt |
1/2 teaspoon baking powder |
Directions:
1. Preheat oven to 350°F. 2. In small bowl, using a fork, combine the cocoa and shortening until it is all the same consistency. 3. Put 2 eggs in a medium bowl and beat with electric mixer until they are light & fluffy. 4. Pour into beaten eggs, a little at a time, one cup of sugar. 5. After each addition of sugar, mix until light and fluffy. 6. Put the chocolate mixture and 1/2 tsp of vanilla into the eggs & sugar mixture. 7. Beat on low speed until it all looks the same. 8. Put in 1 cup of flour, 1/4 tsp salt, and 1/2 tsp baking powder. 9. Mix with fork or spoon until its all the same. 10. Put in greased pan. 11. Bake for 30 minutes. |
