Ingredients:
3 large carrots
1/2 large onion
2 cups beans
1 large zucchini
1 cup rice
10 ounce chicken thighs
9 cups water
Directions:
1. Cook beans first until just soft. Use 3 cups water for every 1 cup beans.
2. Add two to three more cups of water, depending on desired consistency of soup.
3. Add the rest of the ingredients: vegetables and the chicken with the skin and fat removed.
4. Spice as desired.
