Ingredients:
1 cup raisins
1 cup fat-free cottage cheese
1/3 cup (3 ounces) 1/3-less-fat cream cheese
1/4 cup sugar
1 (8-ounce) carton fat-free sour cream
1 (4-ounce) carton egg substitute
8 cups cooked yolk-free egg noodles (about 12 ounces uncooked)
cooking spray
2 tablespoons sugar
1 teaspoon ground cinnamon
Directions:
1. Preheat oven to 350°.
2. Combine first 6 ingredients in a large bowl. Add the noodles, tossing gently to coat. Spoon mixture into an 11 x 7-inch baking dish coated with cooking spray. Combine 2 tablespoons sugar and cinnamon; sprinkle over noodle mixture. Bake at 350° for 45 minutes or until set.
