Mom's Bean 'n Bacon Salad |

A traditional recipe, from my Family Recipe Box. I remember this one from my childhood. Ingredients:
2 (16 ounce) cans green beans, drained and cooked on high for 10 minutes,cooled |
1/2 cup chopped onion |
1/3 cup salad oil |
1/4 cup vinegar |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 can pimiento |
4 hard-boiled eggs, chopped |
1/4 cup mayonnaise |
1 teaspoon mustard |
2 teaspoons vinegar |
1/4 teaspoon salt |
4 slices bacon, crisply cooked and crumbled |
Directions:
1. Mix salad ingredients. 2. Mix dressing ingredients. 3. Put into serving container and put dressing on top of the salad. 4. Top with cooked, crumbled bacon. 5. From the Family Recipe Box, in Mom's handwriting. 6. These days, I'd add a bit of Tabasco, to taste. |
