Mom's Banana Drop Cookies |

This recipe is a little different from others on this site. I swear by Mom's cookies. We had these a lot growing up-especially when the bananas were getting too ripe! Mom would make cookies rather than throw away perfectly good food! This is a great way to use up your bananas, and it's tasty! Cooking time is refrigeration time plus actual baking time. Ingredients:
1 1/4 cups sugar |
2/3 cup crisco |
1 teaspoon vanilla |
2 eggs, unbeaten |
3 ripe mashed bananas |
2 1/4 cups sifted all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
1 cup nuts (optional) |
1/4 cup sugar |
1/2 teaspoon cinnamon |
Directions:
1. pre-heat oven to 375°F 2. Cream sugar, crisco and vanilla. 3. Add in eggs. Stir to combine. 4. Do not overmix 5. Stir in mashed banana. 6. Sift together flour, baking powder, baking soda, and salt. 7. Add to wet mixture. 8. Stir in nuts. 9. Chill in bowl in refrigerator 30 minutes. 10. Drop by teaspoons onto greased cookie sheets. 11. Mix 1/4 C sugar and 1/2 t cinnamin together. Sprinkle the UNBAKED cookies with this mixture. 12. Bake at 375F 8-10 minutes. Do not burn 13. cool on racks. 14. Enjoy with milk! |
