Mom's Banana Chocolate Chip Cake |

This is one of my favorite recipe's for overripe bananas, with the rest of the ingredients typically on hand. I have used it for birthdays, breakfasts and other potlucks, the pan always comes home empty. Ingredients:
3/4 cup sugar |
1 cup margarine, softened |
2 eggs |
1/2 cup sour milk (add 1 1/2 tsp lemon juice to milk to sour) |
1 cup mashed banana |
1 teaspoon vanilla |
2 cups flour |
1 cup oatmeal |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
6 ounces chocolate chips |
1/2 cup nuts (optional) |
Directions:
1. In large bowl combine sugar, margarine and eggs, mix well. 2. Stir in milk, bananas, vanilla and blend thoroughly. 3. Stir in flour, soda and oats, mix well. 4. Stir in chocolate chips (and nuts if using). 5. Spread batter in greased 9 x 13 pan. 6. Bake 30-35minutes at 350 degrees. |
