This is my mom's recipe for Banana Bread (AKA Banana Nut Bread, but I usually leave the nuts out). It's pretty simple to make, and it's great if you've got a few bananas lying around that are perhaps a bit too dark to be eaten plain. Read more . A great breakfast or dessert!
Ingredients:
1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1-1/2 cups mashed ripe bananas (3-4 medium)
1/3 cup water
1-2/3 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt (optional)
1/2 cup chopped nuts (optional)
Directions:
1. Preheat oven to 350 degrees
2. Grease bottom only of loaf pan
3. Mix sugar and margarine in 2-1/2 quart bowl
4. Stir in eggs until blended
5. Add bananas and water; beat 30 seconds
6. Stir in remaining ingredients except nuts until just moistened; stir in nuts
7. Pour into pan
8. Bake until wooden toothpick inserted in center comes out clean
9. **Baking Times: 8 in. loaf 1-1/4 hours, 9 in. loaf 55-60 min.
10. Cool 5 minutes
11. Loosen sides of loaf from pan; remove from pan
12. Cool completely before slicing
