This is my mom's recipe for Banana Bread (AKA Banana Nut Bread, but I usually leave the nuts out). It's pretty simple to make, and it's great if you've got a few bananas lying around that are perhaps a bit too dark to be eaten plain. Read more . A great breakfast or dessert! Ingredients:
1 cup sugar |
1/3 cup margarine or butter, softened |
2 eggs |
1-1/2 cups mashed ripe bananas (3-4 medium) |
1/3 cup water |
1-2/3 cups all-purpose flour |
1 tsp. baking soda |
1/4 tsp. baking powder |
1 tsp. salt (optional) |
1/2 cup chopped nuts (optional) |
Directions:
1. Preheat oven to 350 degrees 2. Grease bottom only of loaf pan 3. Mix sugar and margarine in 2-1/2 quart bowl 4. Stir in eggs until blended 5. Add bananas and water; beat 30 seconds 6. Stir in remaining ingredients except nuts until just moistened; stir in nuts 7. Pour into pan 8. Bake until wooden toothpick inserted in center comes out clean 9. **Baking Times: 8 in. loaf 1-1/4 hours, 9 in. loaf 55-60 min. 10. Cool 5 minutes 11. Loosen sides of loaf from pan; remove from pan 12. Cool completely before slicing |
