Yummy Banana Bread - Mom's first banana bread recipe!
Ingredients:
2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 cup mashed banana
1 teaspoon lemon juice
1 cup chopped nuts
Directions:
1. Sift togeth flour, baking powder, salt, soda,and sugar.
2. Add shortening, eggs, bananas and lemon juice.
3. Stir to combine ingredients, then beat 2 minutes at medium speed on electric mixer or 300 strokes by hand.
4. Stir in 3/4 cup nuts.
5. Pour into greased loaf pan 5 1/4 x 9 1/2 inches.
6. Sprinkle 1/4 cup nuts over top of batter.
7. Bake in moderate oven 350 degrees 1 hour and 15 minutes.
8. Makes one loaf.
