This is a colorful zesty chickpea salad my mom makes for most occasions. It is missed when she doesn't make it.
Ingredients:
1 cup chopped green scallions
1 lb grape tomatoes cut in 1/2 length wise (*not cherry*)
1/4 cup chopped cilantro
1/4 cup chopped italian parsley
1/2 cup extra virgin olive oil
2 tablespoons minced garic
3/4 cup balsamic vinager
1 teaspoon sugar
1/2 teaspoon sea salt
1 pinch ground white pepper
2 cans of chickpeas (15.5 oz)
Directions:
1. mix all the ingredients in a bowl.
2. serve chilled.
