An easy twist on potato salad. This is my mom's recipe. She's been making it for years.
Ingredients:
4 russet potatoes, baked
3 green onions, chopped
6 slices bacon, cooked and crumbled
1 cup mayonnaise
2 teaspoons creole seasoning
Directions:
1. Cut cooled potatoes into chunks, mix with green onions bacon and mayo. Add creole seasoning to taste. Chill completely before serving.
