These are really good. You can freeze the dough ahead of time for up to 2 weeks. Just roll into a log and wrap well in wax paper. Slice off what you need. Ingredients:
1/2 cup all-purpose flour |
1 cup oat flour |
1 teaspoon salt |
1 teaspoon baking soda |
3/4 cup sugar |
3/4 cup brown sugar |
1/2 cup butter |
1/2 cup sugar-free applesauce |
2 eggs |
1 tablespoon vanilla extract |
3 1/2 cups rolled oats |
1 1/2 cups chopped apricots |
1 cup chopped pecans (optional) |
Directions:
1. Mix all the ingredients together. 2. Bake in a 350 oven on an ungreased cookie tray for 12 to 15 minute DO NOT OVERCOOK. Remove when they are light brown on the bottom. |
