from The Cast Iron Skillet Cookbook Ingredients:
1/2 cup unsalted butter, room temperature |
1/2 cup sugar |
1/2 cup light brown sugar |
2 eggs |
3 overripe bananas |
1/2 teaspoon vanilla |
2 cups flour |
1 teaspoon baking soda |
1/4 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon cardamom |
1 dash allspice |
1/4 cup chopped nuts |
1/4 cup sour cream |
Directions:
1. Preheat oven to 350ยบ. 2. Beat butter and sugars until smooth and creamy. 3. Beat in eggs, one at a time. 4. Beat in bananas and vanilla. 5. In a separate bowl, mix dry ingredients together. 6. Fold the dry ingredients into the wet, until well blended. 7. Fold the nuts and sour cream into batter until just blended. Do not over-mix. 8. Butter a cast iron skillet. Pour batter into skillet-bake in oven until toothpick inserted in the center comes out clean-45 minutes to an hour. |
