Momosita's Chickpea Spinach Delish |

I made this up for a quick lunch for my veggie friend, DH and I. It turned out great! If you don't have Recaito, you can subsitute 1/2 bunch of chopped cilantro. I think it's important to use Red Gold diced tomatoes because they are not mushy and have great flavor. Serve over rice. Ingredients:
1 tablespoon olive oil |
1 medium onion, diced |
4 garlic cloves, minced |
1/2-1 teaspoon coriander |
1/2-1 teaspoon cumin |
2 -3 tablespoons recaito |
4 ounces green chilies |
15 ounces chickpeas, drained |
15 ounces red gold tomatoes, undrained |
1/2 bunch spinach |
salt and pepper |
Directions:
1. Saute onion in olive oil until soft and translucent. 2. Add garlic and spices. Cook for 1-2 minutes until garlic is fragrant. 3. Add Recaito, green chilis, chickpeas, undrained tomatoes, and spinach. 4. Cover and cook over medium heat for 5 minutes or until spinach slightly steams and is wilted. 5. Cook over medium-low, uncovered for 10 minutes. 6. Serve over rice. |
