This dish is truly remarkable - it will definitely have people talking about what a unique idea. My family make it for various get-togethers and loves it. Ingredients:
2 cups crushed graham cracker crumbs |
2 sticks butter (melted) |
1 cup sugar |
1 1/2 tablespoons lemon juice (or juice of 1/2 lemon) |
1 can eagle brand milk |
4 eggs (separated) |
1 pound cottage cheese (small curd) |
2 tablespoons vanilla |
4 tablespoons flour |
Directions:
1. Mix graham cracker crumbs with melted butter. Press 3/4 of this mixture in 9 x 13 inch pan. 2. Mash cottage cheese with fork. Slightly beat egg yolks and mix with lemon juice and Eagle Brand Milk. 3. Add stiffly beaten egg whites, sugar, flour & vanilla. 4. Pour over graham cracker crumbs in pan. Sprinkle remaining 1/4 of crumbs on top. 5. Bake at 350 degrees for 30 to 40 minutes, or until knife inserted in center come out clean |
