My mother made a wonderful scallop potato dish that made me drool as a child! Unfortunately, I never got her recipe but this is my attempt to duplicate her wonderful dish! Miss ya mom! Ingredients:
3 to 4 lbs. potatoes, sliced very thin |
salt |
3/4 stick butter |
1 can cream of mushroom soup |
1/2 onion, sliced very thin |
2 tablespoons flour |
1 soup can milk or half and half |
8 oz. sharp or medium cheddar cheese, freshly shredded |
pepper to taste |
dried parsley |
1 teaspoon garlic powder |
Directions:
1. Saute onions in butter until tender. 2. Layer potatoes with onions in casserole dish. 3. Season with salt, pepper, garlic powder, and parsley. 4. Mix flour with milk until blended. 5. Stir in mushroom soup. 6. Pour over potatoes and stir. 7. Cover with cheese. 8. Cover casserole with foil and bake 45 minutes to 1 hour. 9. Remove foil and continue to cook until potatoes are done and topping is browned. |
