My mom has made these for Christmas for as long as I can remember. I wanted to post the recipe so I wouldn't lose it. Servings and yield are guesstimates as they are not listed on her recipe card. Ingredients:
3/4 cup butter |
1 cup sugar |
2 eggs |
1 teaspoon vanilla |
1 1/2 cups flour |
2 teaspoons baking powder |
1 tablespoon cinnamon |
1 cup pecans, chopped |
confectioners' sugar, to roll cookies in |
Directions:
1. Topping - Combine cinnamon, pecans and confectioners sugar and set aside. 2. Preheat oven to 375 degrees. 3. Cream butter and sugar, then add eggs one at a time. Add vanilla. 4. Add the flour and baking powder and mix well. 5. Form into small balls. Roll in topping. Place on greased cookie sheet and flatten slightly. 6. Bake 8-10 minutes or until a light golden brown. |
