Mom T's Refrigerator Bran Muffins |

There are other recipes for these muffins but none of them are the same as this one. I hate most bran muffins but these are wonderful! Who knew eating healthy could be so yummy! This batter can be kept in the refrigerator for a couple of weeks so you can bake fresh batches when you want them. I usually make 6 at a time. Ingredients:
5/8 cup butter |
3 cups sugar |
4 eggs, beaten |
1 quart buttermilk |
2 cups all-bran cereal (pellet shape) |
2 cups boiling water |
5 cups flour |
5 teaspoons baking soda |
1 teaspoon salt |
4 cups all-bran cereal (long type) |
2 cups raisins (you may substitute blueberries, figs or dried apples) |
Directions:
1. Cream butter and sugar. 2. Add beaten eggs and buttermilk to butter mixture. 3. Mix together and let stand a minute the All Bran (pellets) and the boiling water. Set aside. 4. Mix dry ingredients, flour, soda and salt. Add choice of fruit. Set aside. 5. Add soaked All Bran to creamed mixture. 6. Add dry ingredients to this. Add the All Bran (long type) and stir slightly until mixed. 7. Let stand in refrigerator 24 hours. 8. When ready to use stir and then bake in greased muffin pan for appoximately 20 minutes at 400 degrees. 9. Store extra batter in airtight container in refrigerator. |
